Preserve Baked Chevre Log

If you have a Belle Chevre Creamery Chevre log on hand you are always ready for company.  Heat oven to 175c fan bake and grab a part used jar of preserves and you are set.

  • 1 125g Chevre log
  • 1/3 cup plus 2Tbsp preserves
  • Fresh or dried Thyme or other herb
  • 2T chopped nuts

Choose a small baking dish and spread 1/3 cup preserves over the bottom drop the Chevre log on it and spread two tablespoons more on top along with the herbs and nuts and bake in preheated oven for ten minutes.

Serve with crostini, fresh bread, crackers, pita chips, or GF options of choice.   Any fresh baguette you are not going to finish while it’s soft can easily be turned into crostini on standby by simply freezing your unused bread to keep it handy.  Then part thaw, slice and fry or grill slices to restore freshness and add some crunch if desired.  

Choice of preserves varies from marmalade to tomato jam!   Pair to your herbs and nuts.  Try marmalade with pistachio and thyme, apricot with walnut and oregano, fig and walnut, all berries also favour goat cheese!
