Aubergine Chevre Spirals
Aubergine or Eggplant spirals are a simple make ahead side dish to serve or take away.
- 2 Aubergine
- 1 125g Chevre log
- 1 small portion pesto
- Salt and olive oil
Slice your aubergine lengthwise in 0.5 cm slices (5 slices) and salt it in advance to reduce water and bitterness from the vegetable. Then spray or drizzle with olive oil and grill on BBQ, frypan, or under the grill until some charred lines or brown appears. Transfer to a covered bowl so that the aubergine continues cooking through as it sits. When cool enough to handle or even an hour later, lay out one slice at a time and paint with pesto (homemade or store bought), then roll the slice around a 12gram portion of fresh Chevre. Two aubergine should give you ten portions and use one Chevre log.
If rolled too hot, your pesto and cheese will run off. Serve within a few hours or refrigerate to have on hand. Best brought back to room temperature for serving.
